Otus (Asio Otus – Barred Owl) is the scientific name of the strigid family, the nocturnal birds of prey, recalling the watchful, alert but also wise, master-like character. Otus has chosen a prominent positioning, with the specific intention of creating beers with quality and organoleptic consistency. It searches for quality, in the meticulous selection of raw materials, in the skillful craftsmanship of ancient techniques and calibrated gestures, and in continuous innovation, with the utmost attention to the formulation of recipes. The production features both high and low fermentation beers, for a total of 12 references, including 1 winter seasonal, a Belgian-style Golden Strong Ale. 7 beers are top-fermented: the range offers 2 bitter India Pale Ale-style beers, a Hellerbock, a Blanche and finally two dark beers, an award-winning Stout and a Chocolate Salted Imperial Stout.
Low fermentation, the brewery’s distinctive feature, is represented by 5 beers: the classic Pilsner, two Bock, a light and a dark amber, and two Helles, German-inspired ales, of which the brewery offers a gluten-free version.
