Forty years later, Giovanni Monaci has renewed the bet he made in the past and, with the help of his sons, has moved to Almenno San Salvatore to revitalize a valley, the one born around the Imagna River, with enormous potential. The new facility, technologically advanced in the sector, lent itself to an expansion of the range of products that now bear the name of the Imagna Valley.
Since November 2015, with the acquisition of the Caseificio Battipaglia in Brugherio (MB), the Monaci family has also begun to bring to the table pasta filata cheeses, a specialty of Southern Italy. In business since 1957, the historic dairy bases its business philosophy on the use of traditional milk processing techniques, specializing particularly in the production of cow’s milk mozzarella, according to the typical recipe using whole milk, rennet and salt.
