Casoncelli the typical first course par excellence. It is a pasta stuffed with Parmesan cheese and meat topped with crispy pancetta, butter and sage. Foiade another traditional first course, usually accompanied by a mushroom sauce, sometimes found with meat sauce or cheese sauce. Polenta with lard and cheese a dish representative of Bergamo tradition made from cornmeal. Polenta is served with slices of lard that melt in the mouth or with the famous and tasty cheeses of the Bergamo valleys. Toasted bread with Taleggio cheese a rustic loaf garnished with tasty Taleggio DOP and caramelized onions. Stracciatella milk and cream ice cream with dark chocolate chips-a beloved flavor invented right in Bergamo in the 1960s-you’ll visit the very ice cream shop that gave birth to this exceptional goodness. Espresso a good espresso is the traditional and indispensable conclusion to any self-respecting Italian meal.
